Ingredients

  • 3 cups All-purpose flour
  • 1.25 cups Warm water
  • 1 tablespoon Active dry yeast
  • 1 tablespoon Organic sugar
  • 0.25 cup Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Ground mahlab (optional)
  • 1 teaspoon Ground anise seeds
  • 1 cup Sesame seeds

Directions

Step 1

In a large bowl, combine the warm water, yeast, and sugar. Allow the mixture to sit for about 10 minutes, or until it becomes frothy.

Step 2

Add the olive oil, salt, ground mahlab (if using), and ground anise seeds to the yeast mixture.

Step 3

Gradually add the flour, starting with 2 cups, mixing until a soft dough begins to form. Add more flour as needed, a little at a time, until the dough is smooth and elastic. Knead for about 8-10 minutes.

Coat a large bowl with a small amount of olive oil. Place the dough in the bowl, turning it to coat with oil, and cover with a damp cloth or plastic wrap. Allow the dough to rise in a warm place for about 1 hour, or until it has doubled in size.
