Ingredients

  • 1 cup canned black beans, drained and rinsed
  • 0.5 cup cooked quinoa
  • 0.5 small onion, finely chopped
  • 2 cloves garlic, minced
  • 0.25 cup sun-dried tomatoes, finely chopped
  • 2 tablespoons ground flaxseed
  • 5 tablespoons water
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon Worcestershire sauce
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 8 pieces slider buns
  • 4 large lettuce leaves
  • 4 slices sliced vegan cheese
  • 4 tablespoons vegan mayo

Directions

Step 1

In a small bowl, combine the ground flaxseed and water. Stir well and set aside for 5 minutes to thicken. This will act as your flax egg.

Step 2

In a large bowl, mash the black beans using a fork or potato masher until they are mostly smooth with some chunks remaining for texture.

Step 3

Add the cooked quinoa, onion, garlic, sun-dried tomatoes, flax egg, soy sauce, smoked paprika, Worcestershire sauce, salt, and black pepper to the mashed beans. Mix everything thoroughly until all ingredients are well incorporated.

Form the mixture into 8 small patties, about 2-3 inches in diameter.

Heat the olive oil in a large skillet over medium heat. Once hot, add the patties to the skillet and cook for about 5-7 minutes on each side, or until they are golden brown and heated through.

While the patties are cooking, toast the slider buns in the oven or using a toaster until lightly crisp.
