Ingredients

  • 2 cups long-grain parboiled rice
  • 2 large red bell peppers
  • 4 large ripe Roma tomatoes
  • 2 medium onion
  • 3 tablespoons tomato paste
  • 4 cups vegetable broth
  • 0.25 cup vegetable oil
  • 3 large garlic cloves
  • 1 whole bay leaf
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup green beans
  • 1 medium carrot

Directions

Step 1

Rinse the rice under cold running water until the water runs clear. Set it aside to drain.

Step 2

Blend the red bell peppers, Roma tomatoes, one onion, and garlic cloves into a smooth puree.

Step 3

Chop the remaining onion and cut the carrots into small cubes.

Step 4

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Stir in the tomato paste and cook for another 3 minutes, stirring occasionally.
