Ingredients

  • 2 cups all-purpose flour
  • 0.75 cups vegan butter
  • 0.25 cups ice-cold water
  • 2 tablespoons sugar
  • 0.5 teaspoons salt
  • 0.5 cups fruit jam of choice
  • 2 tablespoons almond milk
  • 1 tablespoons additional sugar for sprinkling

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, mix together the flour, sugar, and salt. Cut in the vegan butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

Step 3

Gradually add the ice-cold water to the flour mixture, stirring gently until the dough comes together. Be careful not to overmix.

Step 4

Turn the dough out onto a floured surface and roll it out to about 1/8-inch thickness.

Step 5

Cut the dough into 16 equal rectangles. Arrange half of the rectangles on the prepared baking sheet.

Place about a tablespoon of jam in the center of each of these rectangles, leaving a small border around the edges.

Brush the edges of the dough with a little almond milk, then top with the remaining rectangles of dough. Gently press the edges together to seal.

Use a fork to crimp the edges of each pastry, then brush the tops with more almond milk and sprinkle with sugar.

Cut a small slit in the top of each pastry to allow steam to escape.

Step 10

Bake in the preheated oven for 18-20 minutes, or until the pastries are golden brown.

Remove from the oven and allow to cool on a wire rack before serving.
