In a small saucepan, heat the almond milk until lukewarm, then add the sugar and stir until dissolved. Remove from heat.
In a large mixing bowl, combine flour, instant yeast, and a pinch of salt. Pour in the lukewarm milk mixture.
Melt the vegan butter and add it along with vanilla extract to the bowl. Mix to form a dough.
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
Place the dough back into the bowl, cover with a damp cloth, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
Meanwhile, in a medium-sized pot, combine the blueberries with powdered sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens, then let it cool.
Once the dough has risen, punch it down and divide it into 10 equal portions.
Flatten each portion into a circle, place a spoonful of the blueberry filling in the center, and carefully fold the edges over to enclose the filling, pinching to seal the dough.
Place the buns seam side down on a baking sheet lined with parchment paper. Preheat the oven to 180°C (350°F).
Cover the buns with a cloth and let them rise for another 30 minutes.
Bake the buns for 18-20 minutes or until golden brown. Let them cool slightly before serving.
