Ingredients

  • 2 cups water
  • 2 tablespoons or bags black tea leaves or tea bags
  • 1 piece cinnamon stick
  • 4 pods cardamom pods
  • 3 whole cloves
  • 3 corns black peppercorns
  • 1 inch piece fresh ginger
  • 1 cup unsweetened almond milk
  • 2 tablespoons maple syrup or agave nectar
  • 0.5 teaspoon vanilla extract

Directions

Step 1

Pour the water into a medium saucepan and bring to a gentle boil over medium heat.

Step 2

While the water is heating, lightly crush the cardamom pods and black peppercorns using a mortar and pestle or the back of a spoon.

Step 3

Add the crushed cardamom, peppercorns, whole cloves, and cinnamon stick to the boiling water.

Step 4

Peel and thinly slice the ginger, then add it to the saucepan.

Step 5

Reduce the heat to low and let the spices simmer for about 5 minutes, allowing their flavors to infuse the water.

Step 6

Add the black tea leaves or tea bags to the saucepan and let them steep with the spices for an additional 5 minutes.

Step 7

Pour in the almond milk and increase the heat slightly to let it heat through without boiling over, stirring occasionally.

Step 8

After the milk is heated, add maple syrup or agave nectar, adjusting the sweetness to your preference.

Step 9

Stir in the vanilla extract, then remove the saucepan from the heat.

Step 10

Strain the chai through a fine mesh sieve into two cups or mugs to remove the tea leaves and whole spices.

Step 11

Serve hot and enjoy your vegan Indian milk tea with some vegan-friendly biscuits or snacks.
