  • 2 cups Vital wheat gluten
  • 3 tablespoons Chickpea flour
  • 1 tablespoon Nutritional yeast
  • 2 teaspoons Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Ground black pepper
  • 1.5 cups Vegetable broth
  • 0.25 cup Soy sauce
  • 0.25 cup Maple syrup
  • 1 teaspoon Liquid smoke
  • 2 tablespoons Vegan 'butter' melted
  • 2 tablespoons Yellow mustard
  • 2 tablespoons Vegan 'honey' or agave syrup
  • 2 tablespoons Brown sugar
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water
  • 10 units Whole cloves

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large mixing bowl, combine vital wheat gluten, chickpea flour, nutritional yeast, smoked paprika, garlic powder, onion powder, and ground black pepper.

Step 3

In a separate bowl, mix together vegetable broth, soy sauce, maple syrup, and liquid smoke.

Step 4

Slowly add the wet ingredients to the dry ingredients, stirring until a dough forms. Knead the dough for about 5 minutes until it becomes elastic.

Shape the dough into a ham-like loaf. Wrap it tightly in a sheet of aluminum foil and place it in a roasting pan.

Bake in the preheated oven for 60 minutes. After 60 minutes, carefully unwrap the foil and continue to bake for another 15 minutes.

In a small saucepan over medium heat, melt the vegan butter and add mustard, vegan 'honey', and brown sugar. Stir until smooth.

In a small bowl, mix cornstarch with water to create a slurry, and add it to the saucepan. Cook for 2 more minutes, until the glaze thickens.

Remove the seitan roast from the oven and brush generously with the glaze. Decorate with whole cloves by embedding them into the loaf at evenly spaced intervals.

Step 10

Return the glazed roast to the oven and bake for an additional 15 minutes or until the glaze is caramelized and sticky.

Step 11

Remove from the oven and allow to rest for 10 minutes before slicing and serving.
