Ingredients

  • 16 ounces Seitan
  • 0.5 cups Soy sauce or tamari (for gluten-free)
  • 2 tablespoons Maple syrup
  • 1 teaspoon Liquid smoke
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Cayenne pepper (optional, for heat)
  • 0.25 cups Water

Directions

Step 1

Preheat your oven to 200°F (93°C).

Step 2

Slice the seitan into thin strips, about 1/8 inch thick for even drying.

Step 3

In a mixing bowl, combine the soy sauce or tamari, maple syrup, liquid smoke, smoked paprika, garlic powder, onion powder, black pepper, cayenne pepper (if using), and water to create the marinade.

Step 4

Place the seitan strips in a shallow dish or a large resealable plastic bag. Pour the marinade over the seitan, ensuring each piece is well-coated.

Step 5

Allow the seitan to marinate for at least 1 hour in the refrigerator, or for best results, overnight.

Step 6

Line a baking sheet with parchment paper or use a wire rack over the baking sheet.

Step 7

Lay the marinated seitan strips in a single layer on the prepared baking sheet or wire rack, ensuring they do not overlap.

Step 8

Bake in the preheated oven for approximately 2 to 3 hours, turning the strips halfway through cooking, until the seitan is dry and chewy but not completely brittle.

Step 9

Remove the jerky from the oven and let it cool completely on a wire rack.

Step 10

Store the cooled jerky in an airtight container for up to 1 week. Enjoy as a high-protein vegan snack!
