  • 240 ml Unsweetened almond milk
  • 7 g Active dry yeast
  • 50 g Coconut sugar
  • 500 g All-purpose flour
  • 5 g Salt
  • 150 g Raisins
  • 60 g Vegan butter
  • 5 ml Vanilla extract
  • 2 g Cinnamon (optional)

Directions

Step 1

Warm the almond milk in a small saucepan over low heat until just lukewarm. Remove from heat and sprinkle the yeast over the top. Add 1 teaspoon of the coconut sugar and let sit for 5-10 minutes, until it becomes frothy.

Step 2

In a large mixing bowl, combine the flour, salt, and remaining coconut sugar. Stir in the cinnamon if using.

Step 3

Make a well in the center of the dry ingredients and add the yeast mixture, melted vegan butter, and vanilla extract. Mix until a dough begins to form.

Add the raisins to the dough and knead on a lightly floured surface for about 8-10 minutes, until it becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook attachment on medium speed.
