Ingredients

  • 200 grams Raw cashews
  • 150 grams Unsweetened shredded coconut
  • 60 ml Maple syrup
  • 30 ml Coconut oil, melted
  • 5 ml Vanilla extract
  • 2 ml Almond extract
  • 50 grams Whole raw almonds
  • 1 pinch Pinch of sea salt
  • 50 grams Additional shredded coconut for coating

Directions

Step 1

Place the raw cashews in a bowl, cover with water, and soak for at least 4 hours or overnight. Drain and rinse the cashews thoroughly.

Step 2

In a food processor, combine soaked cashews, shredded coconut, maple syrup, melted coconut oil, vanilla extract, almond extract, and a pinch of sea salt. Process until you achieve a smooth and creamy consistency.

Step 3

Transfer the mixture into a bowl and refrigerate for about 30 minutes to firm up, making it easier to roll.

Step 4

While the mixture is chilling, dry roast the whole almonds in a pan over medium heat for 4-5 minutes until they are golden brown and fragrant. Let them cool completely.

Step 5

Once the mixture has firmed up, take about one tablespoon of the mixture and flatten it in your palm. Place one roasted whole almond in the center and roll the mixture around it to form a ball.

Step 6

Repeat this process until all of the mixture is used up.

Roll each ball in additional shredded coconut until completely coated.
