  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 2 tablespoons Neutral cooking oil
  • 0.5 cup Water (for cooking)

Directions

Step 1

Start by making the dumpling wrappers. In a large bowl, mix the all-purpose flour with boiling water using a wooden spoon until it's cool enough to handle. Knead the dough on a lightly floured surface for about 10 minutes until smooth. Cover the dough with a damp cloth and let it rest for 30 minutes.

Step 2

While the dough is resting, prepare the filling. Finely chop the green cabbage and carrot, and crumble the tofu. Mince the garlic and chop the green onions.

In a large skillet over medium heat, add the sesame oil. Sauté the garlic and ginger until fragrant, about 1 minute.

Add the cabbage and carrot to the pan. Cook until the vegetables are softened, about 5 minutes. Stir in the crumbled tofu, green onions, soy sauce, salt, and pepper. Cook for an additional 2 minutes. Remove from heat and let the filling cool.

Once the dough has rested, divide it into small balls, about 1 inch in diameter. Roll each ball into a thin circle, about 3 inches in diameter, using a rolling pin. Dust with flour to prevent sticking.

Place a tablespoon of filling in the center of each wrapper. Moisten the edge of the wrapper with a bit of water, fold it over the filling, and seal the edges tightly by pleating or pressing firmly.

In a large non-stick skillet, heat the neutral cooking oil over medium-high heat. Add the potstickers in a single layer, making sure they don't touch.

Cook until the bottoms are golden brown, about 2-3 minutes. Carefully add 1/4 cup of water to the skillet and cover immediately with a lid. Allow the potstickers to steam and continue cooking for another 5-7 minutes until the water has evaporated.

Remove the lid, let the potstickers crisp up slightly again for about 1 minute, and then remove from the skillet.
