Ingredients

  • 240 ml Unsweetened almond milk
  • 7 g Active dry yeast
  • 50 g Coconut sugar
  • 500 g All-purpose flour
  • 1 tsp Salt
  • 80 g Vegan butter
  • 120 ml Vegan honey substitute
  • 1 tsp Cinnamon
  • 1 tsp Vanilla extract

Directions

Step 1

Warm the almond milk in a small saucepan until it's just about lukewarm. Remove from heat and add the active dry yeast and 1 tablespoon of the coconut sugar. Stir gently and let it sit for about 10 minutes until it becomes frothy.

Step 2

In a large mixing bowl, combine the all-purpose flour, salt, and remaining coconut sugar. Mix well.

Step 3

Melt the vegan butter in a saucepan over low heat. Once melted, remove from heat and set aside to cool slightly.

Step 4

Once the yeast mixture is frothy, add it to the dry ingredients, followed by the melted vegan butter, vanilla extract, and half of the vegan honey substitute. Stir until a dough begins to form.

Step 5

Transfer the dough onto a floured surface and knead for about 8 minutes until smooth and elastic.

Step 6

Place the dough in a lightly oiled bowl and cover it with a damp cloth. Let it rise in a warm area for about 1 hour or until it has doubled in size.

Step 7

Once risen, preheat your oven to 180°C (350°F). Punch down the dough to release the air and roll it out on a floured surface into a large rectangle approximately 12x18 inches.

Step 8

Brush the surface with half of the remaining vegan honey substitute and sprinkle evenly with cinnamon.

Step 9

Roll the dough tightly from the long end, creating a log shape. Slice the log into 12 equal pieces.

Step 10

Arrange the slices in a greased baking dish, leaving a small gap between each bun.

Step 11

Cover with a cloth and let the rolls rise again for about 20 minutes.

Step 12

Bake in the preheated oven for 20-25 minutes, or until golden brown.

Step 13

Brush the remaining vegan honey substitute over the buns immediately after removing them from the oven for a shiny, sweet glaze.

Step 14

Allow the buns to cool slightly before serving. Enjoy your delicious vegan honey buns warm!
