Ingredients

  • 4 cups all-purpose flour
  • 1 cup coconut milk
  • 1 cup unsweetened pineapple juice
  • 2.25 teaspoons active dry yeast
  • 0.5 cup sugar
  • 0.25 cup vegan butter, softened
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar

Directions

Step 1

Warm the coconut milk and pineapple juice in a small saucepan over low heat until they are just slightly warm, about 110°F (43°C). Be careful not to overheat.

Step 2

In a large mixing bowl, combine the warm pineapple juice and coconut milk mixture with the yeast and 1 tablespoon of the sugar. Stir well and let it sit for about 5 minutes until foamy, which indicates the yeast is active.

Step 3

Add the remaining sugar, vegan butter, salt, vanilla extract, and apple cider vinegar to the yeast mixture. Stir until the butter is melted.

Step 4

Gradually add the flour, one cup at a time, mixing with a wooden spoon until you achieve a soft dough that pulls away from the sides of the bowl.

Step 5

Transfer the dough to a lightly floured surface and knead by hand for about 8 minutes, or until the dough is smooth and elastic.

Step 6

Place the kneaded dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.

Step 7

Punch down the dough and divide it into 12 equal pieces. Shape each piece into a smooth ball.

Step 8

Arrange the balls of dough in a greased 9x13-inch baking pan, leaving some space between each one.

Step 9

Cover the baking pan with a damp cloth and let the dough balls rise again for about 30-45 minutes, until they have puffed up.

Step 10

Preheat your oven to 350°F (175°C).

Step 11

Once the rolls have doubled in size, bake them in the preheated oven for about 20-25 minutes, or until golden brown on top.

Step 12

Remove the rolls from the oven and allow them to cool slightly in the pan before transferring to a wire rack to cool completely.

Step 13

Serve warm with additional vegan butter if desired. Enjoy these fluffy and flavorful vegan Hawaiian rolls!
