Ingredients

  • 240 ml Almond milk
  • 60 g Coconut oil
  • 7 g Active dry yeast
  • 380 g All-purpose flour
  • 50 g Granulated sugar
  • 1 tsp Salt
  • 70 g Brown sugar
  • 2 tbsp Ground cinnamon
  • 1 tsp Vanilla extract
  • 120 g Powdered sugar
  • 56 g Vegan butter

Directions

Step 1

In a small saucepan, heat the almond milk and 60g of coconut oil over low heat until warm and the coconut oil is melted. Remove from heat and let cool until it's lukewarm.

Step 2

In a large mixing bowl, pour the warm almond milk and coconut oil mixture and sprinkle the yeast over the top. Let it sit for about 10 minutes to activate, until it looks frothy.

Step 3

Add the granulated sugar and salt, then stir in the flour, a little at a time, until a dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes, until smooth.

Step 4

Place the dough in a lightly greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 5

Once the dough has risen, roll it out on a floured surface into a large rectangle about 1/4 inch thick.

In a small bowl, combine the brown sugar and ground cinnamon.

Brush the dough with melted vegan butter, and sprinkle the cinnamon sugar mixture evenly across the surface.

Starting from one of the long edges, roll the dough tightly into a log and slice into 12 even rolls.

Place the rolls in a greased baking dish, cover with a towel, and let rise again for 20-30 minutes.

Preheat your oven to 180°C (350°F). Bake the rolls for 25-30 minutes until golden brown.

Step 11

For the glaze, combine the powdered sugar, vanilla extract, and 2-3 tablespoons of almond milk, stirring until smooth.

Step 12

Drizzle the glaze over the warm cinnamon buns and serve.
