Ingredients

  • 240 ml Almond milk
  • 7 g Active dry yeast
  • 50 g Coconut sugar
  • 400 g All-purpose flour
  • 80 g Vegan butter
  • 5 g Salt
  • 10 g Cinnamon
  • 100 g Brown sugar
  • 60 ml Maple syrup
  • 5 ml Vanilla extract
  • 60 g Pecans (optional)

Directions

Step 1

Warm the almond milk to around 37°C (98°F). In a small bowl, mix it with the active dry yeast and a pinch of coconut sugar. Let it sit for 5-10 minutes until frothy.

Step 2

In a large mixing bowl, combine 400g all-purpose flour, 50g coconut sugar, and 5g salt. Add 60g of melted vegan butter and the yeast mixture. Mix until a dough forms.

Step 3

Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 4

Meanwhile, prepare the caramel sauce. In a small saucepan over medium heat, combine the remaining 20g of vegan butter, 60ml maple syrup, 5ml vanilla extract, and 100g brown sugar. Stir until the sugar dissolves and the mixture is smooth. Set aside to cool slightly.

Once the dough has risen, roll it out on a lightly floured surface to a large rectangle about 1/2 inch thick.

Mix 100g brown sugar and 10g cinnamon. Spread them evenly over the dough, and sprinkle the optional pecans if using. Roll the dough tightly into a log and slice it into 2-inch segments.

Grease a baking dish and pour the caramel sauce into the bottom. Arrange the rolls on top, giving them some space to expand. Cover and let them rise for another 30 minutes.

Preheat the oven to 180°C (350°F). Once the rolls have risen, bake them for 25-30 minutes or until golden brown.

Remove from oven and let them cool for a few minutes. Carefully invert the baking dish onto a serving platter to let the caramel drip down over the rolls.
