Ingredients

  • 500 grams All-purpose flour
  • 10 grams Instant yeast
  • 100 grams Vegan butter
  • 240 milliliters Unsweetened almond milk
  • 50 grams Sugar
  • 8 grams Salt
  • 60 milliliters Aquafaba (liquid from canned chickpeas)
  • 0.5 teaspoon Turmeric (for color)
  • 15 grams Sesame seeds (optional, for topping)

Directions

Step 1

Warm the almond milk slightly until lukewarm, about 110°F (43°C).

Step 2

In a large mixing bowl, combine the warm almond milk and sugar. Stir until the sugar is dissolved.

Step 3

Add the instant yeast to the milk mixture and let sit for about 5 minutes until frothy.

Step 4

In a separate small bowl, whisk together the aquafaba and turmeric until well combined.

Step 5

In the large mixing bowl, add the aquafaba mixture, melted vegan butter, and salt to the yeast mixture and stir to combine.

Step 6

Gradually mix in the flour, one cup at a time, until a dough forms.

Step 7

Knead the dough for about 8-10 minutes until smooth and elastic. You can do this either in a stand mixer with the dough hook attachment or by hand on a lightly floured surface.

Step 8

Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.

Step 9

Punch down the dough and transfer it to a floured surface. Divide the dough into 8 equal pieces and shape each piece into a tight ball.

Step 10

Place the dough balls onto a baking sheet lined with parchment paper, leaving enough space between each bun for expansion.

Step 11

Cover the buns with a damp kitchen towel and let rise for another 30-45 minutes until puffy.

Step 12

Preheat your oven to 375°F (190°C).

Step 13

If desired, brush the tops of the buns with a little almond milk and sprinkle with sesame seeds.

Step 14

Bake in the preheated oven for 18-20 minutes, or until golden brown on top.

Step 15

Allow the buns to cool slightly on a wire rack before serving.
