Ingredients

  • 250 grams all-purpose flour
  • 120 grams coconut oil
  • 60 ml ice-cold water
  • 1 teaspoon salt
  • 3 medium apples
  • 1 tablespoon lemon juice
  • 50 grams brown sugar
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 2 teaspoons cornstarch
  • 2 tablespoons soy milk
  • 30 grams powdered sugar

Directions

Step 1

In a bowl, mix the all-purpose flour and salt. Add the solid coconut oil and use a pastry cutter or fork to blend until the mixture resembles coarse crumbs.

Step 2

Pour in the ice-cold water gradually, mixing until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Step 3

Peel, core, and dice the apples into small cubes. In a saucepan over medium heat, combine the apples, lemon juice, brown sugar, cinnamon, nutmeg, and cornstarch.

Cook the apple mixture for about 5-7 minutes, stirring occasionally, until the apples begin to soften and the liquid thickens. Remove from heat and allow to cool slightly.
