Ingredients

  • 400 grams firm tofu
  • 100 ml white wine vinegar
  • 200 ml sunflower oil
  • 4 garlic cloves
  • 1 medium onion
  • 2 bay leaves
  • 0.5 teaspoon ground white pepper
  • 0.25 teaspoon dried chili flakes
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 1 teaspoon mustard seeds
  • 1 teaspoon sea salt
  • 0.5 teaspoon black peppercorns

Directions

Step 1

Press the firm tofu to remove excess moisture, then cut into slices about 1 cm thick.

Step 2

In a pot, bring 500 ml of water to boil and add a tablespoon of salt. Once boiling, blanch the tofu slices for 1-2 minutes. Remove and let them cool.

Step 3

Peel and thinly slice the garlic cloves and onion. Set aside.

Step 4

In a medium bowl, mix the white wine vinegar, sunflower oil, and 100 ml of water. Stir in the sliced garlic, onion, bay leaves, ground white pepper, dried chili flakes, rosemary, thyme, mustard seeds, sea salt, and black peppercorns.

Step 5

In a clean glass jar, layer the tofu slices with the marinade mixture, ensuring each layer of tofu is fully covered by marinade.

Step 6

Seal the jar and refrigerate for at least 3 days to allow the flavors to meld, shaking the jar gently every day to redistribute the marinade.
