  • 3 cloves garlic cloves, minced
  • 1 medium red bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 1 medium carrot, diced
  • 1 stalk celery stalk, diced
  • 12 ounces plant-based turkey substitute, crumbled
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 28 ounces diced tomatoes, undrained
  • 15 ounces black beans, drained and rinsed
  • 15 ounces kidney beans, drained and rinsed
  • 2 cups vegetable broth
  • 1 cup corn kernels, fresh or frozen
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 avocado, sliced (for serving)
  • 0.25 cup cilantro, chopped (for garnish)

Directions

Step 1

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

Step 2

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 3

Add the red bell pepper, green bell pepper, carrot, and celery to the pot. Cook the vegetables for about 5-7 minutes, stirring occasionally, until they begin to soften.

Step 4

Add the plant-based turkey substitute and cook for 5 minutes, stirring frequently, until evenly browned.

Step 5

Stir in the chili powder, ground cumin, oregano, smoked paprika, and cayenne pepper. Cook for 1-2 minutes to toast the spices.

Step 6

Pour in the diced tomatoes, black beans, kidney beans, vegetable broth, and corn kernels. Stir to combine all ingredients.

Step 7

Season the chili with salt and black pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes, stirring occasionally.

Step 8

Taste and adjust the seasoning if needed.

Step 9

Serve hot, garnished with sliced avocado and chopped cilantro. Enjoy your hearty vegan turkey chili!
