  • 2 stalks celery stalks, diced
  • 2 medium potatoes, peeled and cubed
  • 14 ounces can of diced tomatoes
  • 4 cups vegetable broth
  • 15 ounces canned white beans, drained and rinsed
  • 5 cups fresh spinach, roughly chopped
  • 1 leaf bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the diced onion and minced garlic and sauté until the onion becomes translucent, about 5 minutes.

Stir in the diced carrots and celery, and cook for another 5 minutes until they start to soften.
