Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 pieces garlic cloves, minced
  • 2 large carrot, diced
  • 2 medium celery stalk, diced
  • 2 medium potatoes, cubed
  • 400 grams green beans, trimmed and cut into 2-inch pieces
  • 400 grams canned diced tomatoes
  • 4 cups vegetable broth
  • 1 piece bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 100 grams spinach leaves
  • 1 tablespoon lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for 5 minutes, until translucent.

Step 3

Stir in the minced garlic and cook for another 1 minute, until fragrant.

Step 4

Add the diced carrots, celery, and cubed potatoes to the pot. Cook for 5 minutes, stirring occasionally.

Mix in the green beans, diced tomatoes, vegetable broth, bay leaf, dried thyme, dried basil, salt, and black pepper.
