  • 6 cups vegan chicken-style broth
  • 1 bay leaf
  • 1 teaspoon thyme, dried
  • 1 teaspoon parsley, dried
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 cups chopped kale or spinach
  • 8 ounces vegan chicken-style pieces
  • 2 tablespoons lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for about 5 minutes, until the onion is translucent.

Step 3

Stir in the minced garlic, sliced carrots, and sliced celery, cooking for another 3 minutes.

Step 4

Add the diced potatoes and stir well to combine.

Pour in the vegan chicken-style broth, and add the bay leaf, dried thyme, dried parsley, salt, and black pepper.
