  • 2 sliced celery stalks
  • 2 medium, peeled and diced russet potatoes
  • 4 cups broccoli florets
  • 1 15-ounce can canned diced tomatoes
  • 4 cups vegetable broth
  • 1 15-ounce can, rinsed and drained canned chickpeas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 0.25 cup, chopped fresh parsley

Directions

Step 1

Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes, until translucent.

Stir in the minced garlic and cook for another 30 seconds until fragrant.
