Ingredients

  • 1 medium red bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 1 large carrot, diced
  • 1 stalk celery stalk, diced
  • 3 cloves garlic cloves, minced
  • 12 ounces plant-based beef crumbles
  • 28 ounces canned diced tomatoes
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, red bell pepper, green bell pepper, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are soft.

Stir in the minced garlic and continue to sauté for an additional 1 minute until fragrant.
