Ingredients

  • 2 tablespoons olive oil
  • 1 medium, finely chopped onion
  • 1 medium, finely chopped bell pepper
  • 3 minced garlic cloves
  • 2 tablespoons tomato paste
  • 1 15 oz can, drained and mashed canned chickpeas
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup, chopped parsley
  • 4 medium pita bread
  • 1 cup, shredded vegan cheese

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Heat olive oil in a skillet over medium heat. Add the chopped onion and bell pepper, sauté for about 5 minutes until softened.

Step 3

Add minced garlic and cook for another minute until fragrant.

Step 4

Stir in the tomato paste and mix well with the vegetables.
