Ingredients

  • 500 g Bread flour
  • 240 ml Pineapple juice
  • 60 ml Coconut milk
  • 7 g Active dry yeast
  • 70 g Cane sugar
  • 5 g Salt
  • 60 g Vegan butter, melted
  • 1 tsp Vanilla extract
  • 1 tsp Turmeric (optional, for color)
  • 1 tbsp Coconut oil (for greasing)

Directions

Step 1

In a small saucepan over low heat, warm the pineapple juice and coconut milk to about 37-40°C (98-104°F), slightly warmer than room temperature.

Step 2

In a large mixing bowl, combine the warmed pineapple juice and coconut milk with the active dry yeast and 1 tablespoon of the cane sugar. Stir briefly and allow it to sit for about 5-10 minutes until foamy.

Step 3

Add the melted vegan butter, remaining sugar, salt, and vanilla extract to the yeast mixture. Mix well to combine.

Step 4

Incorporate the bread flour a cup at a time, mixing thoroughly after each addition. The dough should be slightly sticky.

For a vibrant golden color, optionally add the turmeric at this stage and mix until the color is evenly distributed.

Step 6

On a lightly floured surface, knead the dough for about 8-10 minutes until smooth and elastic. If the dough sticks to your hands, sprinkle a little more flour as you knead.

Form the dough into a ball and place it in a greased bowl, covering it with a damp cloth. Allow it to rise in a warm, draft-free location for about 1 to 1.5 hours, or until doubled in size.

Once the dough has risen, punch it down gently to remove excess air. Divide it into 12 equal portions, shaping each into a smooth ball.

Place each dough ball in a lightly greased baking pan, close but not touching each other, to allow room for further rising. Cover them again with the damp cloth and let rise for another 30 minutes.

Preheat your oven to 180°C (350°F).

Bake the buns in the preheated oven for about 20-22 minutes, or until they are golden brown. They should sound hollow when tapped on the bottom.

Allow the buns to cool slightly before serving them warm.

Store any leftover buns in an airtight container for up to 3 days, or freeze for longer storage.
