Ingredients

  • 32 oz Frozen shredded hash browns
  • 2 tbsp Olive oil
  • 1 medium Onion, chopped
  • 1 medium Red bell pepper, chopped
  • 3 cloves Garlic cloves, minced
  • 0.25 cup Nutritional yeast
  • 2 cups Unsweetened almond milk
  • 1 cup Vegan sour cream
  • 2 tbsp Cornstarch
  • 0.5 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Chopped fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, and sauté for about 5 minutes until they are soft.

Step 3

Add the minced garlic to the skillet and cook for another minute until fragrant.

Step 4

In a large mixing bowl, combine the sautéed vegetables, frozen hash browns, nutritional yeast, paprika, salt, and black pepper. Mix well to combine.

In another bowl, whisk together the almond milk, vegan sour cream, and cornstarch until smooth.

Step 6

Pour the almond milk mixture over the hash brown mixture and stir until everything is well coated.
