Ingredients

  • 20 grams Konjac powder
  • 300 ml Water
  • 100 grams Rice flour
  • 50 grams Tapioca starch
  • 30 grams Potato starch
  • 15 ml Mushroom soy sauce
  • 10 ml Sesame oil
  • 5 grams Grated fresh ginger
  • 20 grams Chopped scallions
  • 100 grams Crumbled firm tofu
  • 50 grams Pickled carrot, diced
  • 5 grams Salt
  • 2 grams Pepper
  • 250 ml Water for dough

Directions

Step 1

Prepare the vegan shrimp base by mixing konjac powder with 300 ml of water. Heat while stirring continuously until it forms a gel-like consistency. Set aside to cool.

Step 2

In a bowl, combine rice flour, tapioca starch, and potato starch. Gradually add 250 ml boiling water while stirring to form a dough. Knead it until smooth and elastic.

Step 3

Cover the dough with a damp cloth and let it rest for 15 minutes.

To create the filling, mix the cooled konjac gel with mushroom soy sauce, sesame oil, ginger, scallions, tofu, and pickled carrot. Season with salt and pepper.

Divide the rested dough into small balls (about 20 grams each). Roll each into a thin circle using a rolling pin.
