  • 250 grams shiitake mushrooms
  • 1 large yellow onion
  • 2 garlic cloves
  • 1 teaspoon ginger
  • 4 tablespoons soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons sake
  • 250 milliliters vegetable broth
  • 1 tablespoon maple syrup
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 4 servings cooked short-grain rice
  • 2 green onions
  • 1 tablespoon sesame seeds

Directions

Step 1

Slice the shiitake mushrooms into thin strips and set aside.

Step 2

Peel and thinly slice the onion. Mince the garlic and grate the ginger.

Step 3

In a large pan over medium heat, add a small amount of oil or cooking spray and sauté the onions for about 5 minutes until they become translucent.

Add the minced garlic and grated ginger to the pan. Sauté for another 1-2 minutes until fragrant.
