Ingredients

  • 16 oz Tempeh
  • 3 tbsp Olive oil
  • 2 tbsp Soy sauce
  • 2 tbsp Lemon juice
  • 1 tsp Garlic powder
  • 1 tsp Dried oregano
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 0.5 tsp Black pepper
  • 1 medium, grated Cucumber
  • 1 cup Non-dairy yogurt
  • 2 tbsp, chopped Dill
  • 2 minced Garlic cloves
  • 1 tsp Salt
  • 1 large, sliced Tomato
  • 1 small, sliced Red onion
  • 1 cup, shredded Lettuce
  • 4 pieces Pita bread

Directions

Step 1

Cut the tempeh into thin strips about 1/4 inch thick.

Step 2

In a medium bowl, mix together olive oil, soy sauce, lemon juice, garlic powder, dried oregano, ground cumin, smoked paprika, and black pepper.

Step 3

Add the tempeh slices to the marinade, making sure they are fully coated. Marinate for at least 15 minutes.

Step 4

While the tempeh is marinating, prepare the vegan tzatziki. Grate the cucumber and remove excess water by pressing it with a paper towel.

In a small bowl, combine the grated cucumber, non-dairy yogurt, chopped dill, minced garlic, and salt. Mix well and set aside.
