Ingredients

  • 1 cup Almond flour
  • 0.25 cup Semolina
  • 0.5 teaspoon Baking powder
  • 0.5 cup Silken tofu
  • 2 tablespoons Coconut milk
  • 2 tablespoons Vegan butter
  • 1.5 cups Sugar
  • 2 cups Water
  • 1.5 tablespoons Rose water
  • 6 Cardamom pods
  • 2 cups Oil for frying
  • 2 tablespoons Pistachios, chopped

Directions

Step 1

In a medium bowl, combine almond flour, semolina, and baking powder.

Step 2

In a blender, blend silken tofu and coconut milk until smooth.

Step 3

Melt the vegan butter over low heat and add it to the almond flour mixture along with the blended tofu. Mix until you have a dough. It should be soft but not sticky. Cover and let it rest for 10 minutes.

Step 4

While the dough rests, in a saucepan over medium heat, combine sugar, water, and cardamom pods. Stir until sugar dissolves and the syrup comes to a boil. Let it simmer for 5 minutes, then remove from heat and stir in rose water. Set aside to cool.

Step 5

After the dough has rested, divide it into small equal portions and roll each into a smooth ball, approximately 1 inch in diameter.

Step 6

Heat oil in a deep pan over medium heat. To check if it's ready, add a small test piece of dough; it should rise to the surface quickly but not get brown immediately.

Step 7

Fry the dough balls in batches, stirring gently, until they turn golden brown on all sides. Remove with a slotted spoon and drain on paper towels.

Step 8

Soak the fried balls in the warm sugar syrup for at least 1 hour to allow them to absorb the syrup and become soft.

Garnish with chopped pistachios and serve warm or at room temperature.
