Ingredients

  • 400 ml Coconut milk
  • 200 g Coconut sugar
  • 100 g Almond butter
  • 1 tsp Cardamom powder
  • 2 tbsp Sliced almonds
  • 2 tbsp Grated coconut
  • 0.25 tsp Salt

Directions

Step 1

Prepare a square baking dish by lining it with parchment paper, allowing some extra to hang over the sides for easy removal later.

Step 2

In a medium-sized saucepan, combine the coconut milk and coconut sugar over medium heat, stirring continually until the sugar is fully dissolved.

Step 3

Once the mixture begins to simmer, lower the heat slightly and add the almond butter, stirring continuously to ensure it's fully mixed in.

Step 4

Add the cardamom powder and salt. Continue to cook, stirring occasionally, until the mixture thickens and starts to pull away from the sides of the pan, approximately 25-28 minutes.

Step 5

Once thickened, remove the pan from the heat and pour the mixture into the prepared baking dish, spreading it evenly with a spatula.

Step 6

Sprinkle the sliced almonds and grated coconut over the top of the mixture, pressing them lightly into the surface.

Step 7

Allow the gudpak to cool at room temperature for about 1 hour, then transfer to the refrigerator for an additional 2 hours to fully set.

Step 8

Once set, use the parchment paper to lift the gudpak from the dish and place it on a cutting board. Cut into squares with a sharp knife, serve, and enjoy!
