  • 1 block Firm tofu
  • 3 tablespoons Olive oil

  • 3 Garlic cloves, minced
  • 2 tablespoons Fresh basil leaves, chopped
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh rosemary, finely chopped
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Freshly ground black pepper
  • 1 Red onion, cut into chunks
  • 2 Bell peppers, assorted colors, cut into chunks
  • 12 Cherry tomatoes

Directions

Step 1

Press the tofu block to remove excess moisture. Slice the tofu into 1-inch cubes.

In a large bowl, prepare the herb marinade by combining olive oil, tamari sauce, balsamic vinegar, maple syrup, minced garlic, chopped basil, parsley, rosemary, smoked paprika, and black pepper. Mix well.

Place the tofu cubes into the bowl with the marinade, stirring gently to ensure the tofu is well coated. Cover the bowl and allow the tofu to marinate in the refrigerator for at least 30 minutes, or up to overnight for more intense flavor.
