Ingredients

  • 20 ounces Canned young green jackfruit in brine
  • 2 tablespoons Olive oil
  • 3 tablespoons Soy sauce
  • 1 tablespoon Maple syrup
  • 2 tablespoons Lemon juice
  • 3 minced Garlic cloves
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons Fresh parsley
  • 6 pieces Skewers

Directions

Step 1

Drain and rinse the canned jackfruit thoroughly to remove excess brine. Pat it dry with paper towels.

Step 2

In a large bowl, combine olive oil, soy sauce, maple syrup, lemon juice, minced garlic, smoked paprika, ground cumin, ground coriander, black pepper, and salt. Mix well to form a marinade.

Step 3

Add the jackfruit pieces to the bowl with the marinade, gently toss to coat all pieces evenly. Cover and allow to marinate in the refrigerator for at least 30 minutes or up to 4 hours for deeper flavor.

Step 4

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

Step 5

Preheat a grill pan or outdoor grill to medium-high heat.

Step 6

Thread marinated jackfruit pieces onto the skewers, packing them tightly to resemble pieces of boneless chicken thighs.

Step 7

Place the jackfruit skewers on the grill, turning every 5 minutes, for a total of about 20 minutes, or until they are nicely charred and heated through.

Step 8

Remove skewers from grill and sprinkle with fresh parsley before serving.

Step 9

Serve hot with your choice of sides such as grilled vegetables or a fresh salad.
