  • 1 large Red bell pepper
  • 1 large Zucchini
  • 1 medium Red onion
  • 200 grams Cherry tomatoes
  • 60 milliliters Olive oil
  • 30 milliliters Lemon juice
  • 3 pieces Garlic cloves (minced)
  • 2 teaspoons Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 10 grams Fresh basil leaves
  • 10 pieces Bamboo skewers

Directions

Step 1

Press the tofu to remove excess moisture. Wrap in a clean kitchen towel and place under a heavy object for 15 minutes.

Meanwhile, soak bamboo skewers in water to prevent burning during grilling.

Cut the pressed tofu into 1-inch cubes.
