  • 1 medium Red bell pepper, cut into 1-inch pieces
  • 1 medium Zucchini, sliced into thick rounds
  • 1 cup Cherry tomatoes
  • 10 skewers Wooden skewers, soaked in water

Directions

Step 1

Press the tofu: Wrap the tofu block in a clean kitchen towel and place a heavy object on top (such as a cast-iron skillet) for about 15 minutes to remove excess moisture.

Prepare the marinade by whisking together lemon juice, olive oil, maple syrup, minced garlic, fresh parsley, fresh rosemary, fresh thyme, salt, and black pepper in a small bowl.
