Ingredients

  • 16 ounces extra-firm tofu
  • 3 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 2 medium, assorted colors bell peppers
  • 1 medium red onion
  • 16 pieces cherry tomatoes
  • 8 pieces wooden skewers

Directions

Step 1

Drain and press the tofu for at least 15 minutes to remove excess moisture.

Step 2

Cut the tofu into 1.5-inch cubes and set aside.

Step 3

In a mixing bowl, whisk together the soy sauce, lemon juice, maple syrup, olive oil, garlic powder, onion powder, smoked paprika, and black pepper to create the marinade.

Step 4

Add the tofu cubes to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, ideally in the refrigerator for up to 2 hours for more flavor.

Step 5

While the tofu is marinating, soak the wooden skewers in water for at least 20 minutes to prevent them from burning during grilling.

Step 6

Prepare the vegetables by cutting the bell peppers and red onion into square chunks roughly the size of the tofu cubes.

Step 7

Preheat your grill or a grill pan over medium-high heat.

Step 8

Assemble the skewers by threading a piece of tofu, followed by a chunk of bell pepper, a piece of red onion, and a cherry tomato. Repeat this pattern until the skewer is filled, leaving a bit of space at both ends. Repeat for all skewers.

Step 9

Lightly oil the grill grates, then place the skewers on the grill.

Step 10

Grill the skewers for about 12-15 minutes, turning every 3-4 minutes until the tofu is nicely charred and cooked through, and the vegetables are tender.

Step 11

Remove the skewers from the grill and let them cool slightly before serving.

Step 12

Serve the skewers warm with your favorite dipping sauce or additional grilled vegetables.
