Ingredients

  • 1 cup Chickpeas, canned and drained
  • 1 cup Vital wheat gluten
  • 2 tablespoons Nutritional yeast
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Soy sauce
  • 0.5 cup Vegetable broth
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a food processor, blend the chickpeas until smooth. You may need to stop and scrape down the sides a few times.

Step 2

Transfer the chickpea mixture into a large mixing bowl. Add the vital wheat gluten, nutritional yeast, smoked paprika, garlic powder, onion powder, soy sauce, vegetable broth, salt, and black pepper.

Step 3

Mix all the ingredients together until a dough forms. Knead the dough for about 2-3 minutes until elastic and firm.

Step 4

Divide the dough into small nugget-sized pieces and shape them into nugget forms using your hands.

Step 5

Preheat a grill pan over medium heat and brush it with olive oil.
