Ingredients

  • 1 cup Long-grain white rice
  • 2 cups Water
  • 2 cups Fresh spinach
  • 1 cup Fresh cilantro
  • 0.5 cup Fresh parsley
  • 1 Jalapeño pepper, seeded and chopped
  • 3 large Garlic cloves
  • 1 medium White onion, chopped
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Rinse the rice in a fine mesh strainer under cold running water until the water runs clear. Drain well and set aside.

In a blender, combine spinach, cilantro, parsley, jalapeño, garlic, chopped onion, lime juice, and 1 cup of water. Blend until smooth.
