  • 0.5 cup fresh parsley leaves
  • 0.25 cup fresh chives
  • 2 tablespoons fresh tarragon leaves
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 whole garlic clove
  • 2 tablespoons nutritional yeast
  • 2 tablespoons extra-virgin olive oil
  • 0.75 teaspoon sea salt
  • 0.25 teaspoon fresh black pepper

Directions

Step 1

Soak the raw cashews in hot water for at least 15 minutes to soften them and make them blend more smoothly.

Step 2

Drain the soaked cashews and rinse them under cold water.

Step 3

In a high-speed blender, combine the soaked cashews, water, basil, parsley, chives, tarragon, lemon juice, apple cider vinegar, garlic, nutritional yeast, olive oil, sea salt, and black pepper.

Step 4

Blend on high speed until the mixture is completely smooth, scraping down the sides of the blender as needed.

Step 5

Taste the dressing and adjust seasoning if needed. You may add a little more salt, pepper, or lemon juice according to your taste.

Step 6

Transfer the dressing to a jar or an airtight container and store in the refrigerator. It should keep for about 5-7 days.

Step 7

Serve the Vegan Green Goddess Dressing over salads, grain bowls, or use it as a dip for veggies.
