  • 4 pieces Whole wheat tortilla wraps
  • 1 can Canned chickpeas, drained and rinsed
  • 2 tablespoons Olive oil
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 1 medium Cucumber, diced
  • 1 cup Cherry tomatoes, halved
  • 0.5 cup Red onion, thinly sliced
  • 0.5 cup Kalamata olives, pitted and sliced
  • 2 cups Fresh spinach leaves
  • 0.5 cup Hummus
  • 1 cup Cashew yogurt
  • 1 large Garlic clove, minced
  • 2 tablespoons Fresh dill, chopped
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Spread the rinsed chickpeas onto a baking sheet and pat dry with a paper towel.

Step 3

In a small bowl, mix olive oil, smoked paprika, garlic powder, and salt. Drizzle over chickpeas and toss to coat evenly.

Roast chickpeas in the oven for 20 minutes or until golden and crispy. Stir halfway through for even roasting.
