Ingredients

  • 50 g grass jelly powder
  • 1000 ml water
  • 1 tsp agar-agar powder
  • 400 ml coconut milk
  • 2 tbsp coconut sugar
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • 1 cup ice cubes

Directions

Step 1

In a medium pot, combine the grass jelly powder and 1000 ml of water. Stir well to dissolve the powder completely.

Step 2

Add the agar-agar powder to the mixture and stir. Place the pot over medium heat and bring to a boil.

Step 3

Once boiling, reduce the heat to low and simmer for about 5 minutes, stirring constantly to prevent lumps from forming. The mixture should begin to thicken.

Pour the grass jelly mixture into a rectangular dish or mold and allow it to cool to room temperature, then refrigerate for at least an hour or until set.

In a separate small saucepan, combine coconut milk and coconut sugar over medium heat. Stir gently until the sugar is dissolved.
