  • 4 pieces Hot dog buns

  • 1 large, sliced into strips Yellow bell pepper
  • 1 large, sliced into strips Green bell pepper
  • 1 medium, sliced Avocado
  • 10 sliced in halves Cherry tomatoes
  • 2 tablespoons, chopped Fresh cilantro
  • 4 tablespoons Spicy mustard
  • 4 tablespoons Vegan mayonnaise
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika

Directions

Step 1

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add sliced onions, red, yellow, and green bell peppers. Sprinkle with salt, pepper, and smoked paprika. Sauté for about 8-10 minutes or until the vegetables are soft and slightly caramelized. Remove from heat and set aside.
