  • 1 large Tomato, chopped
  • 1 cup Coconut milk
  • 1 cup Vegetable broth
  • 2 teaspoons Curry powder
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Fresh cilantro, chopped
  • 4 pieces Lime wedges

Directions

Step 1

Heat the coconut oil in a large pot over medium heat.

Add the cumin seeds and let them sizzle for about 1 minute until aromatic.

Stir in the chopped onion and sauté until translucent, about 5 minutes.
