  • 1 packet instant yeast
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 2 tablespoons cornmeal
  • 0.5 cup tomato sauce
  • 1 cup vegan mozzarella cheese
  • 1 cup fresh spinach
  • 0.5 cup red bell pepper, sliced
  • 0.25 cup red onion, thinly sliced
  • 0.5 cup mushrooms, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon crushed red pepper flakes

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

In a large mixing bowl, combine the gluten-free flour blend, baking powder, salt, and yeast.

Step 3

In a separate bowl, mix the warm water, olive oil, and maple syrup together.

Step 4

Pour the wet ingredients into the dry ingredients, and stir until a dough forms. The dough will be sticky.

Step 5

Lightly flour a surface with gluten-free flour and knead the dough for about 2-3 minutes until smooth.

Step 6

Place the dough ball on a piece of parchment paper sprinkled with cornmeal, using hands coated in a little olive oil to spread it into a circle about 10 inches in diameter.

Step 7

Transfer the parchment paper with the dough onto a baking sheet or pizza stone.

Step 8

Pre-bake the crust in the oven for 8-10 minutes until the edges begin to set and turn lightly golden.

Step 9

Remove from the oven and spread tomato sauce over the crust, leaving a small border for the crust.

Step 10

Sprinkle the vegan mozzarella cheese evenly over the sauce.

Step 11

Top with fresh spinach, sliced bell pepper, red onion, and mushrooms.

Step 12

Sprinkle dried oregano, basil, and crushed red pepper flakes over the vegetables.

Step 13

Return the pizza to the oven and bake for another 15-20 minutes until the cheese is melted and the crust is golden brown.

Step 14

Remove from the oven, let it cool for a few minutes, and slice into wedges.

Step 15

Serve warm and enjoy your vegan gluten-free pizza!
