  • 0.25 teaspoon Salt
  • 0.5 cup Vegan butter, softened
  • 1 cup Coconut sugar
  • 0.25 cup Unsweetened applesauce
  • 0.25 cup Molasses
  • 1 teaspoon Vanilla extract
  • 0.25 cup Granulated sugar (for rolling, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt until well combined.

Step 3

In a large mixing bowl, beat the vegan butter and coconut sugar together until light and fluffy. This should take about 2-3 minutes using an electric mixer.

Add the applesauce, molasses, and vanilla extract to the butter-sugar mixture. Beat until everything is fully combined.
