  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1.5 cups Vegetable broth
  • 2 tablespoons Soy sauce
  • 2 tablespoons Olive oil
  • 1 tablespoon White wine vinegar
  • 4 sprigs Fresh rosemary
  • 4 sprigs Fresh thyme
  • 4 Garlic cloves, sliced
  • 3 Carrots, roughly chopped
  • 4 medium Potatoes, quartered
  • 1 large Leek, chopped
  • 1 cup Red wine
  • 1 Bay leaf

Directions

Step 1

In a large bowl, combine the vital wheat gluten, nutritional yeast, garlic powder, onion powder, ground rosemary, ground thyme, smoked paprika, salt, and black pepper.

Step 2

In a separate bowl, whisk together the vegetable broth, soy sauce, olive oil, and white wine vinegar.

Step 3

Pour the wet ingredients into the dry ingredients, stirring with a spatula until a dough forms. Knead the dough with your hands for about 3-5 minutes until it becomes elastic.

Shape the dough into a log, mimicking the shape of a leg of lamb. Wrap it tightly in aluminum foil, ensuring ends are sealed.

Steam the seitan log for 60 minutes, turning halfway through. Once done, remove from heat and set aside.

Preheat your oven to 350°F (175°C).

In a large roasting pan, arrange the carrots, potatoes, leek, and sliced garlic. Add the fresh rosemary, fresh thyme, and bay leaf over the vegetables.

Unwrap the seitan log and place it on top of the vegetable bed.

Pour the red wine over the seitan and vegetables. Cover the pan with aluminum foil.

Roast in the preheated oven for 45 minutes.

Step 11

Remove the foil and roast an additional 15 minutes until the seitan has browned and the vegetables are tender.

Step 12

Let the seitan rest for 10 minutes. Slice and serve with roasted vegetables and pan juices.
