Ingredients

  • 500 grams all-purpose flour
  • 10 grams instant dry yeast
  • 100 grams granulated sugar
  • 250 milliliters unsweetened almond milk
  • 75 grams vegan butter
  • 1 teaspoon salt
  • 2 tablespoons ground cinnamon
  • 75 grams brown sugar
  • 1 teaspoon vanilla extract

Directions

Step 1

Warm the almond milk in a small saucepan over low heat until it is lukewarm. Remove from heat and add the yeast, dissolving completely. Let sit for about 5 minutes until it becomes foamy.

Step 2

In a large mixing bowl, combine the flour, granulated sugar, and salt. Add the yeast mixture along with 50 grams of melted vegan butter and the vanilla extract.

Step 3

Mix the ingredients until a soft dough forms. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.

Step 4

Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

In a small bowl, mix the brown sugar and cinnamon.

After the dough has risen, punch it down and roll it out on a floured surface into a large rectangle, approximately 40x30 cm.

Spread the remaining melted vegan butter over the dough. Sprinkle the cinnamon-sugar mixture evenly over the buttered dough.

Starting from one of the long sides, roll the dough tightly into a log, sealing the edges by pinching them slightly.

Cut the log into 12 even slices and place them in a greased baking dish, leaving a little space between each bun to allow for expansion.

Cover the baking dish with a cloth and let the buns rise for another 30 minutes.

Preheat the oven to 190°C (375°F).

Bake the buns in the preheated oven for about 20 minutes, or until they are golden brown.
