Ingredients

  • 1 cup pearl barley
  • 2 tablespoons olive oil
  • 1 medium, diced onion
  • 3 minced garlic cloves
  • 2 large, diced carrots
  • 2 diced celery stalks
  • 2 medium, peeled and diced potatoes
  • 1 medium, white and light green parts sliced leek
  • 8 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon, chopped fresh thyme
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Rinse and drain the pearl barley under cold water until the water runs clear.

Step 2

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

Add the minced garlic and sauté for another minute until fragrant.

Stir in the diced carrots, celery, potatoes, and leek. Cook for 5 minutes, stirring occasionally.
