Ingredients

  • 400 grams fusilli pasta
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 300 grams vegan ground beef
  • 1 400g can canned crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 250 milliliters vegetable broth
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons nutritional yeast

Directions

Step 1

Bring a large pot of water to a boil. Add a pinch of salt and the fusilli pasta. Cook according to package instructions until al dente. Drain the pasta and set it aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Step 3

Add the minced garlic and diced red bell pepper to the skillet, stirring frequently, and cook for another 2-3 minutes until the pepper softens.

Step 4

Increase the heat to medium-high and add the vegan ground beef to the skillet. Cook, breaking it apart with a wooden spoon, until browned, about 5 minutes.

Step 5

Reduce the heat to medium, and stir in the crushed tomatoes and tomato paste. Mix well to combine.

Step 6

Add the dried oregano, dried basil, and vegetable broth to the skillet. Stir and let simmer for about 10 minutes, allowing the flavors to meld together.

Step 7

Add the soy sauce (or tamari), salt, and black pepper. Stir to incorporate. Taste and adjust seasoning if necessary.

Step 8

Combine the cooked pasta with the vegan meat sauce, tossing until the pasta is thoroughly coated.

Step 9

Serve hot, garnished with fresh parsley and sprinkled with nutritional yeast for a cheesy flavor.

Step 10

Enjoy your Vegan Fusilli Pasta with Meat Sauce!
